MARINATED PRAWNS, AVOCADO AND MANGO SALAD

Ingredients

  • 1 tub of natural marinated prawns

  • 1 mango cut into cubes or strips

  • 1 avocado sliced or cubed

  • 300g leafy salad mix

  • 200g halved cherry tomatoes

  • 2 green onions thinly sliced diagonally

Creamy Thai dressing

  • ½ cup mayonnaise

  • ¼ cup sweet chili sauce

  • juice of ½ a lime a bit extra for the dressing

Instructions

Step 1: Mix together the mayonnaise, sweet chilli and lime juice together and set aside.

Step 2: Arrange the leafy salad mix in a large bowl, or individual serves.

Step 3: Layer the salad with avocado, green onions, cherry tomatoes, and mangoes, then finish it off by placing prawns on top. Drizzle with the creamy Sweet Chili Dressing.
