PEA AND PRAWN BRUSCHETTA

Ingredients

  • 1 packet of smoked prawns

  • 1/2 cup frozen baby peas

  • Pinch caster sugar

  • 150g smooth + creamy goat's cheese

  • 1 tablespoon sour cream

  • Juice of half a small lemon

  • 1 white, crusty baguette, cut into 1.5cm slices

  • 1 large garlic clove, peeled and cut in half length-ways

  • Olive oil to serve

Instructions

Step 1: Into a mixing bowl, add the goat's cheese, sour cream and lemon juice, stir to combine until smooth and fully lump-free, season with freshly ground black paper.

Step 2: Lightly toast the slices of bread then rub each one with the cut garlic clove.

Step 3: To assemble: spread goat's cheese paste onto each slice of toasted bread, top with a few baby peas, 1 prawn, and a drizzle of olive oil. Season with a final grind of black pepper.
