THE TRICOLOUR TAGLIATELLE WITH SMOKED PRAWN

Ingredients

  • 1 packets of Natural Norfolk Bay Gourmet Seafoods Wood Smoked Prawns

  • 300g Tricolore Tagliatelle

  • 4 cloves garlic, minced

  • 3 tbsp butter

  • 250g. heavy cream

  • 200g. vegetable stock

  • 2/3 tbsp fresh lemon juice

  • Salt and freshly ground black pepper to taste

  • 1/4 cup freshly grated Parmesan

  • 2 tablespoons chopped fresh dill or parsley

Instructions

Step 1: Cook pasta according to package instructions. Drain and reserve 1 cup of cooking water.

Step 2: In the meantime, melt 3 tablespoons of butter in a large skillet/frying pan, add garlic to the skillet and cook, stirring frequently, until fragrant. Then pour in the cream, vegetable stock, lemon juice, dill and season to taste.

Step 3: Allow to simmer over a gentle heat until the sauce coats the back of a spoon. Add prawns to the skillet and cook, stirring occasionally.

Step 4: Add the pasta and a little of the cooking water and toss until the pasta is coated in the sauce.

Step 5: Serve with lemon wedges and Parmesan.
