Smoked Mussel Salad with Oranges and Avocados

A terrific no-cook meal option and a great summer salad for the crowd. 

Ingredients

  • 1 packet Norfolk Bay Gourmet Seafoods Wood Smoked Mussels
  • 2 Oranges
  • 1 tsp lemon juice
  • Salt
  • 250g rocket
  • 1/4 cup fresh mint
  • 1/4 cup fresh dill
  • 2 avocados

Step by Step Instructions

Step 1

Mix together paprika, cumin, oil and lime zest. Add smoked prawns and toss to coat.

Step 2

In a separate bowl, mix avocado, lime juice and yoghurt.

Step 3

 Season prawns with basil, oregano, salt and pepper.

Step 4

Heat a frying pan over high. Add the prawns and cook turning them for 3 minutes.

Step 5

Heat tortillas in a dry pan. Top tortillas with avocado cream, spinach, slaw, prawns and peanuts. Serve garnished with chilli sauce and lime wedges.

Step by Step Instructions

Step 1

Mix rocket, fresh mint and fresh dill together.

Step 2

Pour over the dressing. (lemon juice, orange zest, and olive oil)

Step 3

Add avocados and oranges.

Step 4

Arrange the smoked mussels in and around the leaves.

Step 5

Season to taste. Toss to coat and serve immediately.
