MARINATED PRAWNS, AVOCADO AND MANGO SALAD
Ingredients
1 tub of natural marinated prawns
1 mango cut into cubes or strips
1 avocado sliced or cubed
300g leafy salad mix
200g halved cherry tomatoes
2 green onions thinly sliced diagonally
Creamy Thai dressing
½ cup mayonnaise
¼ cup sweet chili sauce
juice of ½ a lime a bit extra for the dressing
Instructions
Step 1: Mix together the mayonnaise, sweet chilli and lime juice together and set aside.
Step 2: Arrange the leafy salad mix in a large bowl, or individual serves.
Step 3: Layer the salad with avocado, green onions, cherry tomatoes, and mangoes, then finish it off by placing prawns on top. Drizzle with the creamy Sweet Chili Dressing.
