MUSSELS BRUSCHETTA

Ingredients

  • 1 packet of natural or garlic smoked mussels

  • 150g cream cheese

  • 4 slices of Sourdough bread

  • 4 tsp extra virgin olive oil

  • 1 lemon to serve

  • Broccoli or arugula microgreens to serve

Instructions

Step 1: Using a pastry brush, brush 2 tbsp of the olive oil onto both sides of the sourdough bread slices.

Step 2: Toast the sourdough on a frying pan over medium-high until toasted – it should take a few minutes on each side.

Step 3: To assemble: spread cream cheese onto each slice of toasted bread, top with 2 mussels, garnish with microgreens and a drizzle of lemon juice. Season with black pepper.
