SMOKED MUSSELS WITH SPAGHETTI AND TOMATO SAUCE

Ingredients

  • 1 packet of Chilli Norfolk Bay Gourmet Seafoods Wood Smoked Mussels

  • 3 cloves garlic, chopped or minced

  • 1 can of diced tomatoes

  • 150 g cherry tomatoes

  • chilli flakes

  • 1/4 cup fresh parsley

  • 1/2 box spaghetti

  • salt, pepper and Italian seasoning to taste

Instructions

Step 1: Cook pasta according to package instructions. Reserve some pasta water and drain.

Step 2: Heat a large skillet over medium-high heat. Add garlic to the skillet and cook, stirring frequently, until fragrant.

Step 3: Add the diced tomatoes, cherry tomatoes, and fresh parsley. Heat through.

Step 4: Add the mussels to the skillet and cook, stirring occasionally, for about 2-3 minutes. Now salt to taste.

Step 5: Add drained pasta to the saucepan and stir to coat completely with sauce. If the sauce is too dry, add some pasta water, if necessary.

Step 6: Serve immediately, garnished with Parmesan and basil or parsley.
