SMOKED MUSSEL SALAD WITH ORANGES AND AVOCADO

Ingredients

  • 1 packet of Natural or Garlic Norfolk Bay Gourmet Seafoods Wood Smoked Mussels

  • 2 oranges

  • 1 tsp lemon juice

  • 250 g rocket

  • 1/4 cup fresh mint

  • 1/4 cup fresh dill

  • 2 avocados

  • salt

Instructions

Step 1: Zest your orange and put the zest in a small jug.

Step 2: Cut the oranges into thick slices and set aside.

Step 3: Add the extra virgin olive oil into your zest and then the lemon juice. Season with a pinch of salt and whisk well to combine.

Step 4: Mix the rocket, fresh mint and fresh dill together and then pour over the dressing.

Step 5: Arrange the smoked mussels in and around the leaves.

Step 6: Cut the avocado into large chunks.

Step 7: Add this to the salad and serve immediately.
