SMOKED MUSSEL BAO BUNS

Ingredients

  • 1 packet of Natural Norfolk Bay Gourmet Seafoods Wood Smoked Mussels

  • 1 carrot, grated

  • 2 zucchini, grated

  • 2 spring onion, sliced thinly

  • Bao buns

    Dressing:

  • 1 tsp red Korean miso (optional)

  • 4 cm piece of ginger, grated, juicy squeezed out

  • 1/2 orange, juice

  • 1 tbsp sesame oil

  • 1/4 cup olive oil

  • 1 tbsp sesame seeds

    To garnish:

  • spring onions

  • sesame seeds (optional)

Instructions

Step 1: In a small jug, combine all the dressing ingredients and mix thoroughly. Season to taste.

Step 2: Prepare the Bay buns by gently pulling them apart. Drizzle a little dressing inside, then fill each bun with spoonfuls of shredded vegetables. Add a couple of mussels on top and drizzle more dressing over them.

Step 3: Finish by garnishing with extra spring onions, herbs, and sesame seeds.
