SMOKED MUSSEL BAO BUNS
Ingredients
1 packet of Natural Norfolk Bay Gourmet Seafoods Wood Smoked Mussels
1 carrot, grated
2 zucchini, grated
2 spring onion, sliced thinly
Bao buns
Dressing:
1 tsp red Korean miso (optional)
4 cm piece of ginger, grated, juicy squeezed out
1/2 orange, juice
1 tbsp sesame oil
1/4 cup olive oil
1 tbsp sesame seeds
To garnish:
spring onions
sesame seeds (optional)
Instructions
Step 1: In a small jug, combine all the dressing ingredients and mix thoroughly. Season to taste.
Step 2: Prepare the Bay buns by gently pulling them apart. Drizzle a little dressing inside, then fill each bun with spoonfuls of shredded vegetables. Add a couple of mussels on top and drizzle more dressing over them.
Step 3: Finish by garnishing with extra spring onions, herbs, and sesame seeds.
