SMOKED PRAWN AND CREAM CHEESE BAGEL
Ingredients
1 packet of garlic or natural smoked prawns
2 bagels
90 g cream cheese
1 tbsp capers
Chopped fresh dill to garnish
Lemon wedges to serve
Quick pickled cucumber:
2 tbsp apple cider vinegar
1/2 tbsp-caster sugar
1/2 tsp grated lemon zest

1/2 small cucumber, peeled into long ribbons
1/2 small red onion

Instructions
Step 1: To make the quick pickle, combine all the ingredients except the cucumber and onion in a medium glass bowl, whisk to dissolve the sugar and salt. Add the cucumber and onion, then toast to coat in the pickling liquid. Set aside to pickle for at least 15 minutes.
Step 2: Spread the half of the toasted bagel with cream cheese, then top with a few prawns and a scattering of capers. Pile on a tangle of the pickled veg, season with black pepper and a few dill springs. Serve with lemon wedges.
